Chop trinity (onions, bell pepper, celery). Set aside....

Jay's Crawfish Etouffee

1 pound Louisiana crawfish tails, rinsed

1 stick of butter

1 large onion, diced

1/2 bell pepper, diced

Jay's Alligator Sauce Piquant

3 pounds tenderized alligator (can substitute with chicken thighs)

1 pound alligator sausage

2 medium onions, diced

Jay's Crab & Corn Bisque

1 lbpound Louisiana lump crab meat

1 cup frozen corn, roasting optional

½ stick of butter

Immediately serve with toasted bread.
